In the Kitchen…

Merry Christmas!  Last night I really got into the spirit of the holidays by cracking open a bottle of wine & baking some holiday cookies!

I thought i'd share these cookie recepies that NO FAIL everyone will love & think you spent hours slaving over!  :)

Oatmeal Penut Butter Sandwiches
Red Velvet Cookies
Chocolate Truffle Cookies

Oatmeal Penut Butter Sandwiches

Ingredients

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup quick cooking oats
  • 3 tablespoons butter, softened
  • 1 cup confectioners' sugar
  • 1/2 cup smooth peanut butter
  • 2 1/2 tablespoons heavy whipping cream

Directions

  1. In a large bowl, cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
  2. In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
  3. Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.
  4. To Make Filling: Cream 3 tablespoons butter or margarine with the confectioners' sugar, 1/2 cup smooth peanut butter, and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

Red Velvet Cookies

Ingredients

  • 1 (18.25 ounce) box red velvet cake mix
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1 tablespoon bourbon (I left this out)
  •
  • Icing
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup butter, softened
  • 2 teaspoons evaporated milk
  • 1 teaspoon vanilla
  • 1/2 cup flaked coconut (left this out)
  • 4 cups confectioners' sugar
  • 1/2 cup chopped pecans (left this out)

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Mix together cake mix, eggs, oil, and bourbon in a large bowl. Roll the dough into balls the size of walnuts. Place 2 inches apart on ungreased baking sheets.
  3. Bake in the preheated oven until the tops start to crack, about 8 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  4. In a large bowl combine cream cheese, butter, evaporated milk, vanilla, and coconut. Add the confectioners' sugar 1 cup at a time, mixing well with each addition. If consistency is too stiff, add more milk.
  5. Place the chopped pecans in a bowl. Spread a generous amount of icing on the bottom of a cookie, sandwich it with another cookie, pressing firmly so that the icing comes all the way out to the edge. Roll the edges of the sandwich cookies in the chopped pecans. Repeat with the remaining cookies.

Chocolate Truffle Cookies

Ingredients

  • 4 (1 ounce) squares unsweetened chocolate, chopped
  • 1 cup semisweet chocolate chips
  • 6 tablespoons butter
  • 3 eggs
  • 1 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Directions

  1. In the microwave or in a metal bowl over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed. Combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
  2. Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Place on ungreased cookie sheets so they are 2 inches apart.
  3. Bake for 9 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Boot Fetish

Being a SoCal girl through & through, I shiver if the temperature drops below 75.  I hate the cold, but I love dressing for it… Especially boots!  They give an effortless edge to any outfit & are so versatile!  Here are some photos from over the last couple weeks I wanted to share.

Steve Madden Moto Boots

I love love motorcycle boots.  They look super cute paired with skinnies & also can add an amazing edge to a LBD or girly outfit.  Check out my girlfriend's grey flat Steve boots… love the unexpected color!

Steve Madden Slouch Healed Boots

I've had these puppies for a few seasons now & still really love them.  They're so versatile & can be dressed up or down.  I paired them with Paige Peg Legs, a flannel & leather jacket.

BC Flat Riding Boots

Riding boots are perfect for running errands & keeping your feet warm in the rain!  I paired them with Joe's Jeans skinnies, an Alternative Apparel top, Billabong Twilight jacket & vintage leopard scarf.

Miss Sixty Chunky Heeled Boots

These boots are my favorite EVER.  They're chunkiness makes them wearable during the day or night & they're super comfy.  Paired with BB Dakota leggings, Twilight jacket & hooded scarf form a local Boutique.

F21 LOVE

Who said amazing shoes had to come with a gigantic price tag?  I'm seriously in love with these lace up booties form Forever 21 & for $26.80 these bad boys can be yours!

The heel is killer… about 5 inches with at least a 1 inch platform, but they're actually really comfortable & easy to walk in.  I've only had them for a week & i've already worn them twice.  Once to drinks with a girlfriend & the other was to date night… in which I got quite the positive response ;)

Drinks with a girlfriend.
Bebe olive pencil cargos & Nordstrom sweater.

Date night.
Joe's Jeans black skinny jeans, Bebe silk top
& leather jacket from a local boutique.

Milk is Evil

Milk campaigns targeted at children & athletes spew out this FALSE information & it really fires me up!

So, yesterday I got in a semi-heated debate with a friend of mine who is convinced that milk is some sort of life source.  He asked me why I considered milk the "devil's drink" & there we so many points I wanted to make, I didn't know where to begin…

Think about it for a second…

What other animal on earth drinks milk from another species, besides human beings?
What other animal on earth drinks milk after maturity has been reached, besides human beings?
Cows weigh THOUSANDS of pounds & calves drink fat filled milk to reach this weight… why are we drinking something that is intended to make you gain weight RAPIDLY?

There is an amazing blog called eatingforenergy.com that talks about pasteurization, growth hormones, antibiotics & other disgusting problems with milk.  Some of my favorite points:

The Unnatural “Beefing Up” of Dairy Cows – Hormones and Antibiotics

"Fifty years ago an average cow produced 2,000 pounds of milk per year. Today the top producers produce about 50,000 pounds! How is this accomplished? Drugs, antibiotics, growth hormones, forced feeding plans and specialized breeding – that’s how."
"The most recent unnatural addition to dairy cows is bovine growth hormone or BGH. This genetically engineered drug is supposed to stimulate milk production without “supposedly” affecting the quality of the milk itself! Rrright….(in the voice of Dr. Evil from Austin Powers)"
"Many countries have banned BGH because of safety concerns. Any substance added to a dairy cow’s body comes out in the milk. I don’t know how you feel, but I don’t want genetically engineered hormones coming into my body!"
"BGH causes a dramatic increase (50 to 70 %) in mastitis (udder infections) in the dairy cows’ udders, because of the constant production of milk. This in turn requires antibiotic therapy to cure the mastitis, and then the residues of the antibiotics appear in the milk we drink."
"Over 50 % of all the antibiotics produced in North America are mixed directly into animal feed. Ideally, antibiotics should be used in farming only when necessary to treat infections."
"However, due to the unhealthy conditions of factory-farmed animals, and the poor, dirty conditions they are raised under, they are fed a constant supply of antibiotics from birth until death."
"We then, are unknowingly consuming far more antibiotics than we intend to, by drinking commercial milk. This fact may be part of the reasons that more and more people are becoming resistant to prescribed antibiotics."
"Milk alone contains traces of up to 80 different antibiotics! Since lactating mammals excrete toxins through the milk, this would include antibiotics, pesticides, chemicals, and growth hormones.?

The Problem with Pasteurization

"Raw milk sours naturally, but pasteurized milk turns putrid and thus manufactueres must remove the slime and pus from pasteurized milk through centrifugal clarification."
"Furthermore, inspection of dairy herds for disease is not even required for pasteurized milk."
"To hit home the problem with pasteurization, calves (baby cows) fed pasteurized milk die before maturity!"
