Healthy Banana Muffins


Newly engaged, my fience & I just moved in together & I'm definitely in "nesting" mode, making him breakfast smothies, packing his lunch & making dinner every night (haha the things LOVE does to a girl), so I plan on sharing some of my favorite recipes with you guys!  I'm definitely an extremely healthy eater & cooker & have been slowly converting my fince over to a health nut, too.

Before, we were putting Fiber One bars in his lunch, but I just didn't like the idea of all those preservatives & sugar.  I figured I could make a healthier version myself at home! 

After finding Keeping Up With the Joneses banana muffin recipe on Pinterest, I decided that I would tweak the recipe & amp it up a bit, adding some protein powder & other healthy additions & after several weeks of playing with the recipe I think we have a winner!  I love that there's no flower, butter, or sugar in these muffins & hope you guys like them too!



Healthy Banana Muffins

Ingredients 

-2 /1/2 cup old fashioned oats

-1 cup yogurt (I use goat yogurt)

-2 eggs
 
-1/4 cup organic agave (you can use stevia, but since these are for my fiance, I'm not too concerned with calories)

 -1 1/2 tsp baking powder

-1/2 tsp baking soda

-2 bananas

-2 tsp cinnamon (heart healthy & yummy)

-3 heaping tbsp vanilla protein powder (fills you up, adds extra a little extra protein to your diet, & also tastes super yummy in the muffins!!)

Instructions

Heat oven to 400 degrees Fahrenheit & spray your muffin pan with cooking spray.

In a blender, slowly combine ingredients together, being sure to add oats in little doses so you don't freeze your blending process.

Pour mixture into muffin pan & make for 20-25 minutes.

Tips

Store your muffins in the fridge!  They'll only keep for a few days before they get moldy in the pantry (the price you pay for preservative free food)!

You can add a wide variety of additions to these muffins, I've tried sliced almonds & want to try dried cranberries when it starts to feel a little more like fall around here.

Breakfast

Hi lovlies!!

I wanted to share my daily breakfast with you guys because I've honestly found that my combo of ingredients in my morning smoothie keep me full, energized, & believe it or not, has made my skin radiant & CLEAR!! 

My secret ingredient?  Spirulina.  What is it?  It's an organic & vegan superfood containing protein, betacarotene, and essential vitamins & minerals & is the most nutritious, concentrated whole food known to humankind. 

One teaspoon Spirulina provides more antioxidants than 5 servings of fruits and vegetables & contains more protien than any other food source in the world (by calorie/protein ratio)... AND only contains about 10 calories per teaspoon.  Whoa.  

Reading reviews of this stuff, people talked about feeling their blood "tingling" with energy & almost feeling "high" from this powerful stuff.  I can't say I've felt tingly or high (lol), but  I have noticed a difference in my SKIN.  I have no blemishes or dark circles to speak of & because I haven't changed anything else in my diet or routine, I can contribute it to this stuff.

Here's my morning shake concoction:

1 tablespoon spirulina
1 tablespoon vegan brown rice protien powder
1 banana
1 cup fresh organic spinach
1 teaspoon cinnamon (great for your heart, is an appetite suppressant, boosts metabolism & is of course supper yummy!)
1/2 cup almond milk
1/2 cup spring water
4 ice cubes 

I blend this up every morning with my Magic Bullet, but you can use a blender.  

Calories: about 200
Protein: 20 grams
Fiber: 6 grams
Complete source of: amino acids, Vitamin A, K, B12, Iron, 
& MUCH more.  

Don't be scared of the dark green color of your shake... I promise it tastes yummy!   
PLUS, it'll taste even better when you see a difference in your energy level, you appetite (all that protien & fiber), your skin & your waistline!!

Breakfast of Champions

It's hard for me to down a big meal in the am, especially during the summertime because my appetite tends to be suppressed when it's hot out (not complaining ;)).   But, it is true that breakfast is the most important meal of the day & this protein smoothie is my daily go-to.  It not only fills me up, but is SUPER healthy & gets my day going on the right foot. 

1 scoop soy vanilla protein powder
1/2 cup organic blueberries
1/2 cup frozen spinach
1/2 cup water or almond milk
1 tablespoon ground flax seed

In total this smoothie has about 150 calories (& around 200 if almond milk is used rather than water) & is packed FULL of fiber, protein, antioxidants & vitamins.   It keeps me full until the afternoon & doesn't make me "crash" like a breakfast high in carbs or sugar would.  Did I mention it's delicious, too?  :)
